I used to be a gigantic pasta lover. At least once a week it was my veggie pasta for dinner! You know those evenings where all you want is eat a lot and crash in the sofa afterwards. Well I hardly have those evenings anymore. That doesn’t mean I will skip pasta forever, or that I am against comfort food. Oh no…
So last week I really was in the mood for a comforting bowl of pasta but then one that would give me energy to work afterwards and not make me feel hungry after a couple of hours… So voilà I tossed together some broccoli, tomatoe and garlic, cooked some buckwheat pasta (high in protein and fibre) and I had my comfy dish that gave me plenty energy.
You need:
1 garlic clove
1 tomatoe chopped in small pieces
1 broccoli (steamed)
olive oil
a tbsp of stock (in powder)
salad (I used roquette and kale salad)
sprouts
2 tbsp sunflower seeds
a pinch of black pepper
a pinch of sea salt
Now what?
Sautee garlic, then the steamed broccoli and finally the tomatoe
Add the stock
Add the cooked buckwheat noodles ( first drain them and rinse with cold water)
Sautee for a couple of minutes
Put on a plate, add salad and sprouts on top
Sprinkle some sea salt and black pepper
Optional
You can add some slices of smoked salmon
