Once in a while I love to make chia pudding. As you probably noticed before I love variation and chia pudding is easy to make beforehand.
AND it is rhubarb season so these weeks I buy them @ my organic farmer and make compotes with it :). It’s also strawberry season so you see where I’m going here.
For the compote:
You need:
2 apples – I used jonagold
2 rhubarb stalks
2 cups sliced/chopped strawberries
1/2 cup water
2 tbsp maple syrup
2 tbsp water
1 cm grated ginger
1 tsp cinnamon or speculaas herbs
Then what?
Put the ingredients in a pot and bring to a boil. Lower the heat and let simmer for app. 1/2 hour.
Chia pudding
You need:
1/4 cup chia seeds
1 cup coconut milk or coconut/rice milk or more if you like it more liquid
a touch of vanilla essence
1/2 tsp cinnamon or speculaas herbs
2 tbsp coconut shreds
a touch of salt
If you like it sweet add 1tbsp maple syrup
Toppings: whatever you like, I used strawberries & hemp seeds for extra crunchiness. And of course a swirl of compote.
Then what?
Put the ingredients together, stir and let sit for app 1 hour or better refrigerate overnight. Stir again before putting the toppings on top and serving.
