On the last Happy Healthy Brunch in Ghent; my good friend Larysa brought this amazing loaf full of good stuff like nuts, seeds and fruit. Everybody loved it, so I asked her if I could share the recipe she used… So here it is!
You need:
3 tbsp coconut butter
400 ml water
150g (+/- 2/3 cup) glutenfree oats
50g(+/- 1/4 cup) almond flour
1 tsp sea salt
75g (+/- 1/3 cup) sunflower seeds
75g (+/- 1/3 cup) pumpkin seeds
75g (+/- 1/3 cup) flax seed
75g nuts (use a mix of the ones you love) (+/- 1/3 cup)
75g dried figs (cut in pieces) (+/- 1/3 cup)
50g dried cranberries (+/- 1/4 cup)
2 tbsp chia seeds
3 tbsp psyllium seeds
Now what?
Melt the coconut oil in lukewarm water and mingle
Mix all the dry ingredients
Use a cake tin, oil it or put baking paper in it
Gently spoon the dough in the tin and press firmly
Let it rest for two hours (important!)
Put in oven (175°) and bake for 20 to 30 minutes
Take the loaf out of the tin and bake for another 30 to 40 minutes
What else?
You can leave the dried fruit out of the recipe for a savory version
