Ah I love soup, especially in winter. You will love this comforting soup to warm you up on a cold winter evening.
You’ll need:
- 3 carrots
- 1 ognion
- 2 garlic cloves
- 1/2 pumpkin
- 2 sweet potatoes
- 2 tbsp turmeric
- 2 tbsp veggie stock
- 1 tbsp ras el hanout
- 1 small slice of ginger
- 1 small piece of turmeric root
- 1,7 l water (less or more depending how thick you want your soup)
- 1 1/2 cup coconut milk
- olive oil
- parsley to garnish
- pepper & salt to taste
Now what?
Heat oil in a big pan. Add onion, garlic, turmeric root and ginger and sauté until onion is translucent. Add the vegetables and stir occasionally. Add the spices and the broth. Then add the water. Finally add the coconut milk. Let simmer for approximately 30 minutes. At the end add pepper & salt to taste and freshly chopped parsley for decoration.
Tip:
Slice the pumpkin in half and put it in the oven (175°C°) for 30 minutes with the sliced side facing up. It makes it so much easier to cut it in dices afterwards.
